Catholic Recipe: Tailor's Collar

    INGREDIENTS

  • 1 onion, finely chopped
  • 3 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 2 teaspoons salt, divided
  • 1/4 cup farina
  • 1 1/2 cups sifted all-purpose flour
  • 2 eggs, beaten
  • 1 tablespoon water
  • 6 cups boiling salted water

DIRECTIONS

Sauté onion in oil in saucepan. Add paprika, 1 teaspoon salt, farina. Stir until browned; reserve. Mix flour, eggs, 1 tablespoon water, 1 teaspoon salt into stiff dough. Knead on lightly floured board; roll thin. Cut dough into 3-inch squares. Drop small spoonful farina mixture in center of each square. Fold and seal squares. Drop into boiling, salted water. Cook 20 minutes. Remove from water; serve immediately. Yield, 6 servings
