Catholic Recipe: Drop Noodles

    INGREDIENTS

  • 4 cups sifted all-purpose flour
  • 2 eggs
  • 1/2 teaspoon salt
  • lukewarm water
  • 4 quarts boiling water
  • 1 cup buttered bread crumbs

DIRECTIONS

Combine flour, eggs, salt and enough water to form firm dough. Beat vigorously until dough pulls away from sides of mixing bowl. Roll out on wet board. Cut into thin strips. Immerse in boiling water in saucepan, 1 layer at a time, until noodles rise to surface. Boil gently 8 minutes. Remove from water with slotted spoon. Rinse in another pot of hot, salted water. Sprinkle with buttered bread crumbs. Yield, 8 servings
