Catholic Recipe: Fried Codfish

    INGREDIENTS

  • 3 pounds dried codfish, cut in 3-inch squares
  • 2 eggs, beaten
  • 3 garlic cloves, finely chopped
  • 2 tablespoons finely chopped parsley
  • 2 cups sifted all-purpose flour
  • milk as needed to make thin batter
  • 1 cup vegetable oil

DIRECTIONS

Soak codfish squares overnight in water in saucepan. Boil codfish 30 minutes. Remove. Drain in colander. Combine eggs, garlic, parsley. Add flour, milk until thin batter results. Heat oil. Dip codfish in batter. Place in hot oil. 375°. Brown thoroughly 5-7 minutes. Drain on absorbent paper. Serve hot. Yield, 6 servings
