Catholic Recipe: New Year's Cake

    INGREDIENTS

  • 1 sherry glass brandy
  • juice and grated rind 1 orange
  • 6 eggs, separated
  • 1 1/4 cups sugar
  • 1/2 cup melted butter
  • 3 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • confectioners' sugar

DIRECTIONS

Mix brandy with orange juice, rind. Beat egg whites until very stiff. Beat egg yolks with sugar until creamy. Add butter; continue beating 5 minutes. Sift flour and baking powder. Add brandy, orange, half the flour, half the egg whites. Blend thoroughly. Add remainder of flour, remaining egg whites. Pour mixture into greased baking tin. Bake 1 1/2 hours at 350°.Sprinkle with sugar. Cool thoroughly. Serve cold. Yield, 1 cake
