Catholic Recipe: Puzzles

    INGREDIENTS

  • 1-1/2 cups sifted all-purpose flour
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon grated lemon rind
  • 3 tablespoons butter
  • 1 egg yolk, slightly beaten
  • 1/3 cup light cream
  • oil for frying
  • confectioners' sugar

DIRECTIONS

Sift flour, sugar, salt together. Add lemon rind. Cut in butter with pastry blender. Combine egg yolk, cream; blend into flour mixture. Turn out on lightly floured board; knead 5 minutes. Roll out 1/16 inch thick. Cut into diamonds 2 x 4 inches; make small lengthwise slit down center of each; pull 2 opposite corners through slit. Heat oil 2 inches deep to 375°. Fry few at a time, 2 minutes or until light brown. Drain. Sprinkle with confectioners' sugar. Yield, 4 dozen
