Catholic Recipe: Prune Sausage

    INGREDIENTS

  • 1/2 pound dried prunes
  • 1 cup sugar
  • 1/4 cup water
  • 1/8 pound dried figs, diced
  • 1 cup chopped walnuts
  • 1/4 cup sugar for rolling

DIRECTIONS

Wash prunes. Cover with water and cook in saucepan 15 minutes or until tender. Drain; pit; chop; reserve. Boil sugar, water in saucepan until it forms soft ball when dropped in cold water. Add prunes. Simmer 30 minutes. Add figs, nuts. Sprinkle board with sugar and roll mixture in it; form sausage shape. Let dry, cool. Cut into 1-inch slices before serving. Yield, about 2 dozen
