Catholic Recipe: Mushroom Soup

    INGREDIENTS

  • 1 cup fresh chopped mushrooms
  • 1 onion, chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 quart vegetable stock
  • 4 tablespoons sour cream
  • chopped dill, parsley

This meatless soup is one of the staples of the Polish Christmas Eve dinner, or Wigilia.

DIRECTIONS

Sauté mushrooms, onions 10 minutes in butter in deep saucepan. Add flour. Cook 5 minutes over low heat, stirring constantly. Add to vegetable stock. Simmer 10 minutes. Stir in sour cream. Sprinkle with dill. Serve at once.
