Catholic Recipe: Christmas Eve Salad

    INGREDIENTS

  • 1 head lettuce shredded
  • 6 beets, cooked, sliced
  • 4 oranges, peeled, sectioned
  • 4 apples, cored, sliced
  • 4 bananas, peeled, sliced
  • 2 cups pineapple cubes
  • sugar
  • seeds from 2 pomegranates
  • 1 cup almonds
  • 1 cup orange juice

DIRECTIONS

Place lettuce in bottom of large bowl. Arrange beets and fruit in layers; sprinkle sugar over each layer. Sprinkle top with pomegranate seeds and almonds. Pour orange juice over before serving. Yield, 8 servings
