Catholic Recipe: Relish Molds

    INGREDIENTS

  • 1 envelope unflavored gelatine
  • 1/4 cup cold water
  • 3/4 cup sugar
  • 2 teaspoons dry mustard
  • 3/4 teaspoon salt
  • 1 cup cider vinegar
  • 3 eggs, slightly beaten
  • 1/3 cup finely diced cucumber
  • 1/3 cup finely diced green pepper

For each guest, an individual vegetable-gelatin mold for the Pennsylvania Dutch Cookout.

DIRECTIONS

Soften gelatine in cold water. Combine next 5 ingredients in saucepan. Stir over low heat until thickened (do not boil). Add gelatine; stir to dissolve. Chill until slightly thickened. Fold in cucumber and green pepper. Spoon into individual molds. Chill until set. Makes 4 to 6 molds, depending on size.
