Catholic Recipe: Dixie Cole Slaw

    INGREDIENTS

  • 9 pounds cabbage, finely shredded (3-3/4 gallons)
  • 2 pounds carrots, finely shredded (2 quarts)
  • 3/4 cup finely minced onion
  • 1 Tablespoon salt
  • 1 teaspoon pepper
  • 2 Tablespoons sugar
  • 1 quart Italian salad dressing

A simple cole slaw, enough for 80 people.

DIRECTIONS

Combine first 6 ingredients. Chill thoroughly. Just before serving, add salad dressing; mix lightly until well combined. Makes 80 servings.
