Catholic Recipe: Glazed Sweet Potatoes Florida

  • 2 cans (16 oz. each) sweet potatoes packed in syrup
  • 1/4 cup butter or margarine
  • 1/2 can frozen concentrated orange juice
  • 1/2 cup light brown sugar, firmly packed

Adding orange concentrate to the sweet potatoes gives this Thanksgiving favorite a Floridian touch.

DIRECTIONS

Drain syrup from 2 cans (1 pound each) sweet potatoes packed in syrup. Boil syrup until reduced to about half. Add 1/4 cup butter or margarine, 1/2 can frozen concentrated orange juice, and 1/2 cup firmly packed light brown sugar. Stir until sugar is dissolved. Add drained potatoes. Cook over low heat, turning occasionally, until potatoes are glazed — about 15 minutes. Makes 8 servings.
