Catholic Recipe: Wayside Inn Pie

INGREDIENTS

  • 2 squares unsweetened chocolate
  • 1/2 cup water
  • 2/3 cup sugar
  • 1/4 cup butter or margarine
  • 2 teaspoons vanilla
  • 1 cup sifted all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup soft shortening
  • 1/2 cup milk
  • 1 egg
  • 1 unbaked 9-inch pie shell with high rim
  • 1/2 cup chopped pecans

This is a rich chocolate-pecan pie. Making the pie shell from scratch will increase the preparation time.

DIRECTIONS

Melt chocolate in water; add 2/3 cup sugar. Bring to boil, stirring constantly. Remove from heat. Stir in butter or margarine and 1-1/2 teaspoons vanilla. Set aside. Mix and sift flour, 3/4 cup sugar, baking powder, and salt. Add shortening, milk, and remaining 1/2 teaspoon vanilla. Beat 2 minutes. Add egg; beat 2 minutes longer. Pour batter into unbaked pie shell. Stir chocolate sauce; pour carefully over batter. Sprinkle top with nuts. Bake at 350° for 55 to 60 minutes or until cake tester, inserted in center, comes out clean.
