Catholic Recipe: Cranberry Loaf

    INGREDIENTS

  • 2 cups sifted all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1-1/2 teaspoons salt
  • 1 cup halved raw cranberries
  • 1/2 cup chopped walnuts
  • 1/2 cup wheat germ
  • 3 Tablespoons grated orange peel
  • 1 egg, slightly beaten
  • 1/2 cup orange juice
  • 1/4 cup warm water
  • 2 Tablespoons vegetable oil

This is an easy quick bread recipe for Cranberry bread. Many families have this bread for their Christmas breakfast.

DIRECTIONS

Mix and sift flour, sugar, baking powder, baking soda, and salt. Stir in cranberry halves, walnuts, wheat germ, and orange peel. Combine egg, orange juice, water, and oil. Add to flour mixture; stir just enough to moisten ingredients. Spoon into greased loaf pan, 9 x 5 x 3 inches. Bake at 350° for 50 to 60 minutes or until done. Cool in pan 5 minutes; remove from pan; finish cooling.
