Catholic Recipe: Easy Fruit Cake

    INGREDIENTS

  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3/4 cup shortening
  • 1/2 cup sugar
  • 1/2 cup honey
  • 2 eggs
  • 1/2 cup applesauce
  • 2 jars (1 pound each) mixed diced candied fruits and peels

This fruitcake uses honey and applesauce for sweetening, lessening the amount of sugar in the recipe.

DIRECTIONS

Mix and sift first 5 ingredients. Cream shortening; add sugar and honey gradually; continue to cream until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in applesauce; stir in mixed fruits and peels. Add dry ingredients gradually, beating well with spoon until blended. Pour into greased and floured 9-inch tube pan. Bake at 300° for 2-1/4 hours.
