Catholic Recipe: Clam Fritters

    INGREDIENTS

  • 1 cup sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • dash paprika
  • 2 eggs
  • 1/4 cup milk
  • 2 cans (10-1/2 ounces each) minced clams, drained
  • vegetable oil
  • ketchup or chili sauce

Fried clams are a universal favorite. Here's how to make them at home.

DIRECTIONS

Sift flour, baking powder, salt, and paprika into medium-sized bowl. Combine eggs and milk; beat slightly; pour into flour mixture; blend well. Stir in drained clams. Pour vegetable oil in heavy frying pan to depth of 1/4 inch; heat to 360°. Drop clam batter by tablespoonfuls into hot fat; fry 3 to 4 minutes or until brown; turn; brown other side. Serve with ketchup or chili sauce. Makes 4 to 6 servings.
