Catholic Recipe: Oysters a la King

    INGREDIENTS

  • 1 pint oysters
  • milk
  • 1/2 pound mushrooms, sliced
  • 4 Tablespoons butter or margarine
  • 4 Tablespoons flour
  • 1/2 cup chopped green pepper
  • 2 Tablespoons minced pimiento
  • 1-1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • dash nutmeg
  • buttered toast

This is a twist on the traditional "Chicken a la King" to serve for meatless meals, such as Friday nights. This is another quick and easy meal.

DIRECTIONS

Simmer oysters in their own liquid 5 minutes; drain thoroughly; measure liquid; add enough milk to make 2-1/2 cups liquid. Sauté mushrooms in butter or margarine 5 minutes. Stir in flour; add remaining ingredients, except oysters and toast. Simmer until thick. Add oysters; simmer until heated through. Serve on toast. Makes 4 servings.
