Catholic Recipe: Egg Balls

    INGREDIENTS

  • 2 cups bread crumbs
  • 4 beaten eggs
  • 1 teaspoon parsley
  • Pinch of thyme
  • 1/2 teaspoon orange peel or lemon peel
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg

This is another meatless dish which combines eggs and bread. For this you'll need more bread crumbs. Place a paper bag over the nose of a meat grinder, and run dry bread through it. When the crumbs are ready, we make egg balls.

DIRECTIONS

Shred parsley, thyme and peel. Add to bread crumbs. Mix in salt and nutmeg. Moisten with beaten eggs and form into little balls. Roll balls in flour and fry. Serve plain or with a Creole sauce.
