Catholic Recipe: Plain Tomato Sauce

    INGREDIENTS

  • 3 Tablespoons olive oil
  • 1 small onion, chopped
  • 1 6 ounces can tomato paste
  • #2 1/2 can Italian plum tomatoes, strained
  • 3 cups water
  • salt and pepper
  • 1/2 bay leaf (optional)
  • 1/2 teaspoon oregano (optional)

This is a basic meatless Italian tomato sauce. Sicilian in origin.

DIRECTIONS

Sauté onion in oil in enamel or stainless steel saucepan until soft. Add tomato paste, strained tomatoes, and water. Stir until well blended, add seasonings, and cook uncovered over low flame until thick, about 1 hour. Enough for 1 pound any kind of pasta.
