Catholic Recipe: Codfish

  • 1-1/2 pounds salt codfish
  • 3 minced onions
  • 2 Tablespoons butter
  • 3 sliced boiled potatoes

  • Pepper
  • 1 teaspoon chopped parsley
  • 2 Tablespoons vinegar

In Brittany, France, where all the housewives are busy on Christmas Eve with preparations for the holiday, they do not bother with fancy cooking. Their "piece de resistance" is plain, inexpensive salt codfish.

DIRECTIONS

Soak cod in cold water for about eight hours. Drain and cook in fresh water for 10 or 15 minutes. Brown onions in butter. Add codfish and potatoes. Cook five minutes longer. Add salt, pepper, parsley and vinegar.
