Catholic Recipe: Pepparkakor (Ginger Cookies)

    INGREDIENTS

  • 2 cups sifted flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cloves
  • 1 1/2 teaspoons ginger
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 cup butter or margarine
  • 1 cup sugar
  • 1/2 cup molasses
  • 1/2 cup light cream

A Swedish traditional cookie, served especially on St. Lucy's ( Lucia )feast day, December 13.

DIRECTIONS

Sift together flour, baking soda, cloves, ginger, cinnamon, and salt. Cream butter until soft. Gradually add sugar and continue to cream until light. Add molasses and mix well. Stir in the flour alternately with the cream and mix thoroughly. Wrap dough in wax paper and chill in refrigerator overnight or for several hours. Roll dough paper-thin on a lightly floured board and cut with a diamond cooky cutter. Bake in moderately hot oven (375° F.) for 10 minutes or until done. (Recipe of Hannah Johnson)
