Catholic Recipe: Cherries and Pecorino Cheese

A simple Italian snack, with the combination of fruit and cheese, the sweet with the tangy. Because of the legend of Pope Gregory the Great and his longing for cherries on St. Mark's feast day (April 25), it would be appropriate to serve cherries on either of these dates.

DIRECTIONS

A delicious rustic snack in honor of St. Gregory for those first warm days of April. The vital ingredients are fleshy early season cherries, still a little pink, and a mature round of Roman pecorino cheese, cut into slivers and presented in a bowl, so that everybody can pick away to their heart's content. Everybody knowns that once you start with cherries, you can't stop; if you pop a little piece of good pecorino cheese into your mouth every now and the, they taste even sweeter. Tasting is believing!
