Catholic Recipe: Italian Wedding Cookies

    INGREDIENTS

  • 2 1/2 sticks butter or margarine
  • 1/2 cup sugar
  • 7 eggs, separated
  • 5 eggs, beaten
  • 1/2 teaspoon salt
  • 2 teaspoons lemon extract
  • 4 teaspoons baking powder
  • 4 2/3 cups presifted all-purpose flour
  • 2 boxes confectioners' sugar
  • Colored sprinkles

DIRECTIONS

Cream butter or margarine, add sugar, 7 egg yolks and 5 beaten eggs, salt, lemon extract, baking powder and 3 cups of the flour. Mix well until dough is workable, adding more flour if needed. Break off large pieces of dough and roll into ropes about 1 inch in diameter. Cut off 1 1/2-inch slices. Bake on greased cookie sheet at 400 degrees F. for about 10 minutes. Beat egg whites to soft peaks, add confectioners' sugar gradually and continue beating until glossy. Spread on cookies and cover with colored sprinkles. --Mrs. Louis Gamber, East Cleveland.
