Catholic Recipe: Beef Broth
Beef broth is made by cooking 2 1/2 lbs. of chuck roast in 2 quarts of water with 1 grated onion and salt to taste. Mexican cooks make an interesting dish from the leftover soup meat called Ropa vieja, or, literally, "old clothes." It is sometimes served under the title "Mexican burgers."
Lightly brown the minced garlic in oil, add the tomato sauce and stir for about 2 minutes. Add cooked meat and fry for about 5 minutes.
