Catholic Recipe: Greek Salad

    INGREDIENTS

  • 1 head lettuce
  • 2 tomatoes, quartered
  • 1 onion, sliced
  • 1 green pepper, chopped
  • 1 cucumber, sliced
  • salt, pepper
  • 1/2 cup olive oil
  • 1/4 cup vinegar
  • 1/4 cup anchovy fillets
  • 1/2 cup herring bits

Also Called: Elliniki Salata

Everyone probably has their own version of a "Greek salad." Here's one version requiring anchovies and herring filets for added flavor.

DIRECTIONS

Combine vegetables. Season with salt, pepper to taste. Mix well. Add oil, vinegar, fish. Toss.
