Catholic Recipe: Buckwheat Groats and Mushrooms

    INGREDIENTS

  • 1 cup buckwheat groats
  • 1 egg
  • 1/2 teaspoon salt
  • 2 cups boiling water
  • 8 dried mushrooms, soaked, washed thoroughly
  • 2 tablespoons chicken fat

DIRECTIONS

Cook buckwheat, egg in skillet over low heat; stir thoroughly. Place mixture in 3-quart casserole. Add salt, fat. Pour boiling water over mixture. Stir in mushrooms. Cover. Bake 1 hour and a half at 350° or cook over medium heat 45 minutes, adding water or meat stock as necessary. Yield, 4 servings
