Catholic Recipe: Sliced Fish

    INGREDIENTS

  • 1 cup chopped onions
  • 1/2 cup olive oil
  • 1/2 cup white wine
  • salt, pepper to taste
  • 2 pounds fish, sliced
  • 3 medium tomatoes, sliced
  • 2 tablespoons chopped parsley
  • 1 tablespoon bread crumbs

DIRECTIONS

Sauté onions in oil in skillet 5 minutes until golden brown. Add wine, salt, pepper. Add fish. Place tomato slice on each slice of fish. Sprinkle with parsley, bread crumbs, a little more salt. Cover. Simmer 1/2 hour. Serve on platter with pan juices as sauce. Yield, 4-6 servings
