Catholic Recipe: Old-Fashioned Johnnycake


  • 1 cup sifted all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup sugar
  • 1 cup corn meal
  • 1 egg, beaten
  • 1 cup sour milk
  • 3 tablespoons butter, melted

Sift together flour, salt, baking powder and sugar into mixing bowl. Stir in corn meal. Combine remaining ingredients; add to corn-meal mixture. Pour mixture into buttered pan. Bake 20 minutes at 400°. Yield, 4 servings
