Catholic Recipe: Herb Omelet III

    INGREDIENTS

  • 3 eggs
  • 1 teaspoon cold water
  • salt, pepper
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped chives
  • 1/8 teaspoon tarragon
  • 1/8 teaspoon fresh thyme
  • 3 tablespoons minced onion
  • 1 garlic clove, minced
  • 1 tablespoon butter

Also Called: Omelette aux Fines Herbes

This classic French dish is so flavorful with all the herbs. Fresh herbs would taste the best, but use what you have available.

DIRECTIONS

Beat eggs until fluffy; add 1 teaspoon water, salt, pepper; set aside. Mix herbs, onion, garlic. Small croutons of fried bread may be added to the herbs, if desired. Combine herbs with hot butter in skillet; add eggs quickly. Finish off, allowing eggs to set, stirring slowly on top of set eggs for 2 minutes; set again for 1/2 minute; fold omelet over to edge of pan. Yield, 2 servings
