Catholic Recipe: Dried Cod

    INGREDIENTS

  • 2 pounds dried cod
  • 2 quarts boiling water
  • 3 leeks, sliced
  • 2 tablespoons chopped parsley
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg

DIRECTIONS

Soak fish in cold water to cover for 6 hours; pour hot water over fish; drain. Remove bones, skin. Cut fish into generous pieces.

Sauté leek, parsley in butter in saucepan 10 minutes. Add fish. Season. Cover; cook until tender.
