Catholic Recipe: Corn Meal with Gorgonzola

  • 4 cups water, divided
  • 1 teaspoon salt
  • 1 cup corn meal
  • 1/4 cup butter
  • 1/4 pound Gorgonzola cheese

Also Called: Polenta con Gorgonzola

DIRECTIONS

Place 2 1/2 cups salted water in top of double boiler. Bring to boil over direct heat. Combine corn meal with remaining water. Add to boiling water. Stir mixture over low heat until boiling. Place top of double boiler over boiling water. Cover. Cook 45 minutes, stirring occasionally. Turn out hot onto serving dish. Make a "well" in center of mixture. Fill with butter and Gorgonzola cheese. Yield, 4 servings
