Catholic Recipe: Corn Meal with Bel Paese

    INGREDIENTS

  • 4 cups water, divided
  • 1 teaspoon salt
  • 1 cup corn meal
  • 2 eggs, slightly beaten
  • 1/2 pound Bel Paese cheese
  • 1/2 cup butter

Also Called: Polenta con Bel Paese

DIRECTIONS

Place 2 1/2 cups salted water in top of double boiler over direct heat. Bring to boil. Combine corn meal with remaining water. Add to boiling water. Add eggs. Stir mixture over low heat until boiling. Place top of double boiler over boiling water. Cover. Cook 45 minutes, stirring occasionally. Turn out in 9 x 9 pan; spread evenly. Chill thoroughly. Turn out of pan; cut into desired shape. Place in greased shallow baking dish. Sprinkle with bits of Bel Paese, butter. Bake 25 minutes at 400°. Yield, 4 servings
