Catholic Recipe: Corn Meal

    INGREDIENTS

  • 4 cups water, divided
  • 1 teaspoon salt
  • 1 cup corn meal

DIRECTIONS

Place 2 1/2 cups salted water in top of double boiler over direct heat. Bring to boil. Combine corn meal with remaining water. Add to boiling water. Stir mixture over low heat until boiling. Place top of double boiler over boiling water. Cover. Cook 45 minutes, stirring occasionally. Serve hot. Yield, 4 servings
