Catholic Recipe: Cheese Turnovers

    INGREDIENTS

  • 2 eggs, well beaten
  • 1/2 cup sifted all-purpose flour
  • 3/4 cup water
  • 1 tablespoon melted butter
  • pinch salt  Filling:
  • 1 pound dry cottage cheese
  • 2 eggs
  • dash ground cinnamon
  • 2 tablespoons sugar
  • dash of salt
  • 1/8 teaspoon vanilla
  • sour cream

DIRECTIONS

Make thin batter of beaten eggs, flour. Add water gradually; beat until smooth. Add melted butter, salt; mix well. Pour thin streams of batter in center of heated, greased 10-inch skillet, distributing batter evenly. Fry until pancake is smooth and firm on top, lightly browned on bottom. Turn out on clean towel. Repeat. Filling:
Combine cheese with remaining ingredients, except sour cream; mix well. Spread warenyki with filling. Tuck sides in; fold or roll in shape of envelope. When all turnovers are filled and rolled, brown in butter in skillet on both sides until firm. Top with sour cream. Serve hot. Yield, 12 turnovers
