Catholic Recipe: Coronado Eggs

    INGREDIENTS

  • 1/8 teaspoon curry powder
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon pepper
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon onion salt
  • 2 tablespoons cream
  • 4 eggs, separated
  • 4 slices white bread
  • 2 tablespoons butter
  • 1/4 teaspoon paprika

DIRECTIONS

Combine curry powder, chili powder, pepper, baking powder, onion salt. Blend with cream. Beat egg whites slightly. Fold into cream mixture. Trim crusts from bread slices; butter. Fit buttered bread slices into buttered individual baking dishes. Pour egg mixture into each bread cup. Float one egg yolk in center of each. Sprinkle with paprika. Bake 15 minutes at 350°. Yield, 4 servings
