Catholic Recipe: Carrot Patties

    INGREDIENTS

  • 1 quart sliced carrots
  • 2 cups soft bread crumbs
  • 1/2 cup finely chopped celery
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 eggs, beaten
  • 1/4 cup butter

DIRECTIONS

Cook carrots until tender; drain; mash. Add soft bread crumbs, celery, salt, cinnamon, beaten eggs; mix well. Form mixture into 12 patties (1/4 cup mixture for each patty). Melt small amount butter in skillet. Fry patties, turning to brown on both sides. Yield, 6 servings
