Catholic Recipe: Cheese Soup

    INGREDIENTS

  • 1 loaf French bread
  • salt
  • 2 onions
  • 2 tablespoons butter, divided
  • 2 cups water
  • 1/2 pound Gruyère cheese, grated
  • 8 small boiled potatoes

DIRECTIONS

Slice bread; salt lightly; cover with water. Reserve until all liquid is absorbed. Sauté onions in 1 tablespoon butter in saucepan. Set aside. Melt remaining butter in large saucepan. Add bread and mash, add water. Bring to boil. Combine with cheese, stirring constantly. Simmer 10 minutes. Add sautéed onions before serving. Garnish with small boiled potatoes. Yield, 4 servings
