Catholic Recipe: Fish Roe Rissoles

    INGREDIENTS

  • 1/2 pound codfish roe
  • 2 large potatoes, cooked and mashed
  • 1 small onion, grated
  • 1 teaspoon chopped mint
  • 1 teaspoon chopped parsley
  • salt, pepper
  • flour
  • vegetable oil

DIRECTIONS

Steep roe 10 minutes in boiling water. Remove from water; discard membranes. Using electric mixer, combine roe, potato, onion, mint, parsley, salt, pepper; blend thoroughly. Shape into balls. Roll in flour. Fry in deep oil until brown and crisp on outside, soft inside. Yield, 4 servings
