Catholic Recipe: Carnival Cookies

    INGREDIENTS

  • 4 eggs
  • 1/4 cup sour cream
  • 1 teaspoon salt
  • 2 1/2-3 cups sifted all-purpose flour
  • 1 cup shortening
  • confectioners' sugar

DIRECTIONS

Beat eggs, sour cream, salt until well blended. Add flour gradually to form stiff dough. Knead on floured board 7 minutes. Place in greased bowl. Cover; set aside to rise for 1 hour.

Heat shortening in 3-quart pan. Roll out dough (rounded teaspoon at a time) to form 7-inch circle. Stretch dough circle with fingertips until paper-thin. Fry 1 at a time in shortening for 2-3 minutes until golden brown. Drain on absorbent paper. Serve sprinkled with confectioners' sugar.
