Catholic Recipe: Corn Meal with Sausage

    INGREDIENTS

  • 1 pound Italian sausage
  • 1 pound mushrooms, cleaned, sliced
  • 1 tablespoon vegetable oil
  • 1 can (20 ounces) tomatoes
  • 1 1/2 teaspoons salt, divided
  • 1/4 teaspoon pepper
  • 1 cup yellow corn meal
  • 3 cups boiling water
  • 1 cup cold water
  • grated Parmesan cheese

DIRECTIONS

Combine sausage, mushrooms, oil in skillet. Cook slowly until brown; stir. Add tomatoes, 1 teaspoon salt, pepper; stir thoroughly. Simmer 20-30 minutes.

Stir 1 cup yellow cornmeal, 1/2 teaspoon salt into 3 cups boiling water in saucepan. Add, gradually, 1 cup cold water. Continue boiling; stir constantly until mixture thickens. Cover. Lower heat. Cook 10-15 minutes.

When polenta, tomato mixtures are ready, place cooked corn meal on warm platter. Top with tomato mixture. Sprinkle with cheese.
