Catholic Recipe: Cream of Mangos


  • 5 large mangos
  • sugar
  • 2 large oranges, peeled, pitted, sectioned
  • 1 tablespoon lemon juice
  • 1 cup heavy cream, whipped
  • 1 cup chopped pecans
  • 12 red Maraschino cherries
  • 12 green Maraschino cherries

Peel mangos and puree. Add sugar to taste (very sweet). Combine with oranges, lemon juice, whipped cream. Fold in pecans. Serve in dessert dishes, topped with red and green cherries. Yield, 12 servings
