Catholic Recipe: Pockets with Cheese or Berries

    INGREDIENTS

    Dough:
  • 2 cups sifted all-purpose flour
  • 2 eggs Filling
  • 1 cup cottage cheese
  • 1 tablespoon butter, melted
  • 2-3 tablespoons sugar
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons currants
  • 1 egg beaten

DIRECTIONS

Make "well" in flour. Add eggs, beat. Knead. Roll out very thin on floured board. Cut in 2-inch squares. Combine cottage cheese, butter, sugar, cinnamon, currants. Add egg. Blend. Place 1 spoon of cheese mixture on square of dough. Fold dough over to form triangle. Pinch moistened edges together very tightly. Boil in 4 quarts salted water for 30 minutes. Drain. Serve with melted butter, sprinkled with toasted bread crumbs. Variation: Make mixture of blueberries or huckleberries with sugar. Place small amount of berries on each dough square. Fold as for cheese pocket. Serve with melted butter, sour cream. Yield, 6 servings
