Catholic Recipe: Mexican Cold Fish

    INGREDIENTS

  • 1-1/2 pounds flounder fillets
  • 1 cup lime juice
  • 2 green peppers, chopped
  • 1/2 cup chopped onion
  • 2 large tomatoes, peeled, coarsely chopped
  • 1 teaspoon salt
  • 1/4 teaspoon oregano
  • 1/4 cup olive oil

DIRECTIONS

Lay fish on platter; cover with lime juice. Marinate for 4 hours. Combine fish, peppers, onions, tomatoes, salt, oregano, olive oil. Chill. Serve cold. Yield, 8 servings
