Catholic Recipe: Carp Fried in Bread Crumbs

  • 4 pounds carp, cut in 1-inch-thick slices
  • 1 cup lemon juice
  • salt
  • 2/3 cup sifted all-purpose flour
  • 2 eggs, slightly beaten
  • 1 cup bread crumbs
  • 1/2 cup butter

DIRECTIONS

Sprinkle fish with lemon juice, salt; let stand 30 minutes, drain.

Dip fish into flour, then egg, then bread crumbs. Fry in deep butter until golden brown. Drain on absorbent paper before serving.
