Catholic Recipe: Beet Soup

    INGREDIENTS

  • 1-1/2 pounds beets, sliced
  • 1 large onion, chopped
  • 6 carrots, chopped
  • 6 stalks celery, chopped
  • 6 cups water
  • parsley, dill
  • 2 garlic cloves
  • salt, pepper
  • paprika
  • 2 tablespoons butter
  • sugar to taste
  • juice of 2 lemons

This meatless soup is a traditional dish for the Polish Christmas Eve, or Wigilia. This can also be used on fast days.

DIRECTIONS

Place vegetables into deep saucepan. Add water and cook 30 minutes. Season; add butter. Add sugar, lemon, being sure to retain deep red color of soup. Strain. Serve liquid, hot or cold, with or without sliced beets according to personal preference.
