Catholic Recipe: Beet Soup
Also Called: Barszcz
This meatless soup is a traditional dish for the Polish Christmas Eve, or Wigilia. This can also be used on fast days.
Place vegetables into deep saucepan. Add water and cook 30 minutes. Season; add butter. Add sugar, lemon, being sure to retain deep red color of soup. Strain.
