Catholic Recipe: Speculaas or Speculatius V

    INGREDIENTS

  • 1 cup butter
  • 1 cup shortening
  • 2 cups brown sugar, firmly packed
  • 1/2 cup sour cream
  • 1/2 teaspoon baking soda
  • 4 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 4 1/2 cups sifted all-purpose flour
  • 1/2 cup chopped nuts

A traditional Dutch spice cookie for St. Nicholas Day.

DIRECTIONS

Cream butter, shortening, sugar. Add sour cream alternately with sifted dry ingredients. Stir in nuts. Knead dough into rolls. Wrap rolls in wax paper; store in refrigerator overnight. Roll dough very thin; cut into shapes. Bake 10-15 minutes at 375 degrees. Decorate with varied colored icings, candied fruit. Yield, 12 dozen
