Catholic Recipe: Tangy Blue Cheese Spread

  • 2 heaping teaspoons tomato paste, tomato ketchup, or chili sauce

In Wisconsin, heart of the dairy land, is a monastery where Salvatorian Fathers pack the finest of cheese in great variety — longhorn, Port du Salut, blue, smoky, Cheddar, brick, Swiss, Gouda, Cloister, and many appetizer spreads and rolls — all made with milk from the seminary farm. From among the kitchen-tested recipes in the "Monastery Cheese" booklet, we chose several we are sure you will enjoy.

DIRECTIONS

Soften butter or margarine until it can be worked with wooden spoon or fork. Add salt and paprika; blend. Add horseradish, blue cheese, and tomato paste or ketchup or chili sauce. Mix well. Spread on hot hamburgers, steaks, or chops. May also be used for sandwich or cracker spread or dip.
