Catholic Recipe: Anniversary Cake

    INGREDIENTS

  • 1 cup shortening
  • 3 cups sifted cake flour
  • 3 teaspoons baking powder
  • 1-1/2 cups sugar
  • 1 teaspoon salt
  • 1-1/4 cups rich milk or half-and-half, divided
  • 4 egg yolks
  • 1 teaspoon rum or rum flavoring

This is another pretty cake for an anniversary party. Use fresh flowers for trimming.

DIRECTIONS

Stir shortening until softened. Mix and sift flour, baking powder, sugar, and salt; add to shortening. Add half the milk or half-and-half, with egg yolks, to shortening and flour mixture; mix until flour is dampened. Beat 1 minute. Add remaining milk and flavoring. Beat 2 minutes. Bake in greased and floured 9-inch tube pan at 325° for 1-1/4 hours. Let stand in pan 5 minutes. Remove from pan to cake rack. When cool, frost with cooked frosting made with 4 egg whites. Tint frosting with food coloring, if desired. Fill center with small fresh flowers.
