Catholic Recipe: Baked Beans and Beef

    INGREDIENTS

  • 1 quart chopped onions
  • 1 cup vegetable oil
  • 5 pounds lean beef, ground
  • 2 quarts coarse bread crumbs
  • 4 eggs
  • 2 cups milk
  • 2 Tablespoons salt
  • 4 teaspoons Ac'cent*
  • 2 No. 10 cans (6 pounds 14 ounces each) baked beans

This dish is layered with ground beef and baked beans.

DIRECTIONS

Cook onions in oil until soft but not brown; combine with meat, crumbs, eggs, milk, salt, and Ac'cent*; mix well. Place layer of this mixture in baking pans. Top with layer of beans. Bake at 375° for 1 to 1-1/2 hours. Cut in squares to serve. Makes 50 servings.

To substitute for No. 10 cans, it would require:
7 No. 303 (l lb) cans
5 No. 2 (1 lb 4 oz) cans
4 No. 2 1/2 (l lb 13 oz) cans
2 No. 3 (46 to 50 oz) cans

*About Ac'cent: This is a form of monosodium glutamate (MSG), which is supposed to intensify flavor, but unessential in any recipe. Some people also have allergies to this ingredient.
