Catholic Recipe: Petits Fours
Petits Fours are small cakes, individually frosted. These make a perfect finger food for parties or buffets.
Cream shortening and sugar. Mix and sift flour, baking powder, and salt; add alternately with milk to creamed mixture; add vanilla. Beat egg whites stiff but not dry; fold in. Bake in greased and floured 9-inch square cake pan at 375° for about 30 minutes. Cool on cake rack. Cut in fancy shapes. Split each piece; put together with raspberry jam. Spoon Coffee Glaze (see recipe) over cakes, letting it run down sides. When glaze is firm, decorate as desired.Recipe Source: Cook's Blessings, The by Demetria Taylor, Random House, New York, 1965
