Catholic Recipe: Christening Cake

    INGREDIENTS

  • 2-1/2 cups sifted all-purpose flour, divided
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup soft shortening
  • 1 cup sugar
  • 5 eggs
  • 1 Tablespoon lemon juices
  • 1 cup canned slivered almonds
  • 1 cup seedless golden raisins, chopped
  • 1/2 cup diced candied orange peel
  • 2 teaspoons grated lemon peel
  • 1-1/2 cups chopped candied cherries

This is a fruited pound cake, a simple loaf cake to serve for a Christening Breakfast.

DIRECTIONS

Mix and sift 2 cups flour, baking powder, and salt. Cream shortening and sugar. Add eggs, one at a time, beating well after each addition, until mixture is light and fluffy. Stir in flour mixture and lemon juice. Combine almonds and fruits with remaining 1/2 cup flour; mix until well coated; fold in. Spoon into greased and floured loaf pan, 8 x 5 x 4 inches. Bake at 300° about 1-1/4 hours or until cake tests done. Cool in pan on rack 15 minutes. Turn out on cake rack. Frost and decorate as desired. Makes 10 large servings or about 20 gift box pieces.
